'Wild-caught black abalone from Taiza, Kyotango'

Black abalone are gathered from the sea after the June wakame fishing season near Kyotango City's Taiza fishing port, famous for its quite rare, small catch-limit crabs. The catch limit of black abalone is also small, and this shellfish is now considered a rare delicacy. The waters around Taiza Port are rich in phytoplankton and seaweed, which the shellfish feed on. The natural black abalone growing in this favourable environment have thick, firm flesh and a sweet, deep flavour.

As Hiiragiya procures only larger pieces (500g-600g each) of this quite special wild-caught black abalone, orders need to be placed at least one week before the date of your stay.

For preparation, the black abalone is layered between sake and kelp, steamed for 4-5 hours, then tenderised and flavoured with a little butter, and then finished with soy sauce. It is served at the table as a steak, with a sauce prepared from the liver.
