This summer-only plan features 'Hamo Shabu' (conger eel hotpot) using natural hamo and onions, a specialty of Awaji Island, in a kaiseki-style dinner.

The sweetness of the onions, one of the farm products for which Awaji Island is famed, and the deliciousness of the hamo blend in the broth, giving a more concentrated taste of hamo.
A great part of 'Hamo Shabu's' appeal is that when the hamo fillets are swished through the steaming broth, the hamo acquires an exquisite texture and fairly melts in the mouth. The addition of Kyoto's yuba (bean curd), fu (wheat gluten) and potherb mustard (a Kyoto vegetable) further enhances the flavour of this unique Kyoto nabe (hotpot).

  Dinner is a kaiseki course featuring 'Hamo Shabu'. Meals can be served in your room.
